Black Bean Quesadillas

Ingredients:
4 large (burrito size) organic whole wheat flour tortillas
1 can black beans, rinsed and drained
sea salt and ground pepper, to taste
taco seasoning, to taste
1 tomato, chopped
1/2 cup fresh pico de gallo
2 tablespoons fresh oregano
4 to 6 ounces Pepper Jack cheese substitute, grated
 
Garnishes:
pico de gallo or salsa
guacamole
sour cream
shredded lettuce
Bring tortillas to room temperature or microwave for 15 - 20 seconds to soften.
Spread 1/3 cup black beans evenly over 1/2 tortilla.
Season with salt, pepper and taco seasoning.
Add 1/4 cup chopped tomato, pico de gallo and fresh oregano.
Place grated cheese substitute on top. Fold in half and gently press together.
Heat large skillet over medium-high heat. Add 2 teaspoons olive oil or use olive oil cooking
spray to coat. Cook quesadillas 2 at a time until browned on both sides.
Transfer to a lined cookie sheet and keep warm in a 300° oven until ready to serve.
Serve warm with garnishes.

Fresh Pico De Gallo

2 ripe tomatoes, quartered, seeded and chopped

1/2 white onion, finely diced
1/4 bunch fresh cilantro, chopped, no stems
juice of 1/2 lime
sea salt, to taste
Mix all, cover and chill. Serve with Mexican cuisine.
