Bread - Whole Wheat
2 packages active dry yeast
21/2 cups lukewarm water, divided use
4 teaspoons sea salt
1/4 cup olive, walnut or hazelnut oil
1 tablespoon soy lecithin granules
1/2 cup applesauce
1/4 cup uncooked rolled oats
3 cups whole wheat flour
3 cups organic unbleached white flour
1/2 cup soy flour
Yield: 4 Loaves
1) Dissolve yeast in 1/2 cup lukewarm water and set aside.
2) In a large mixing bowl combine the remaining ingredients, add the yeast and mix in well.
3) Pour out onto floured work surface and knead well, about 10 minutes.
4) Cover with tea towel and set aside to rise in a warm place until double in bulk.
5) Punch down and let rise again.
6) Punch down and divide into 4 portions. Place dough into 4 oiled loaf pans. Cover and
let rise 3/4 hour.
7) Bake in a 350° oven for 1 hour.
Cinnamon Raisin Bread
one portion and flatten out on floured work surface approximately the length of your pan,
spread with cinnamon, ground nuts, maple granules and raisins and roll up, sealing the
ends well.
2) Place in oiled loaf pan and resume above instructions.
