Cranberry Relish
1/2 orange
11/2 cups water
1 medium Granny Smith apple, peeled and diced
1 package fresh cranberries (about 3 cups), sorted, washed and drained
3/4 cups sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
Yield: 3 Cups
Squeeze the orange into a small cup and set the juice aside.
Remove the membranes from the peel and discard. Dice the peel into small pieces and
place in a small saucepan along with the water and bring to a boil. Reduce to simmer and
continue to cook for 10-15 minutes until the peel is soft, then drain and set aside.
Place the apple, cranberries, orange peel, reserved orange juice, sugar and spices in a
medium saucepan. Mix well. Cook over medium high heat until boiling, reduce the heat
to simmer and continue to cook for about 20 minutes until the cranberries have burst and
the mixture has thickened.
Transfer to serving bowl, cover with wrap and cool in refrigerator until ready to serve.
