Black Bean Southweatern

Ingredients:
2 cups mixed salad greens
1/2 cup black beans, rinsed and drained
6 oz tofu
2 tablespoons sliced olives
1/4 cup salsa
1 tablespoon sour cream
fresh cilantro for garnish
 
Serves 1
 
Place salad greens in bowl. Add beans, tofu and sliced olives.
Top with salsa, sour cream and garnish.

Simple

Ingredients:
1 cup baby spinach
1 cup mixed salad greens
3 oz cubed turkey
1/2 cup sliced fresh mushrooms
1/2 cup sliced strawberries
1/4 cup chopped pecans
2 tablespoons feta cheese
 
Serves 1
 
Combine all dressing ingredients in blender and purée, pour 2 tablespoons
over salad and serve.
 
Dressing - Raspberry Vinaigrette:
2 tablespoons hazelnut oil
2 teaspoons raspberry vinegar
1/4 cup raspberries (fresh or
frozen)
1 tablespoon dijon mustard
sea salt, to taste

Mediterranean

Ingredients:
2 cups baby arugula
1/2 cup cannellini beans, rinsed and drained
(can use Great Northern or White Beans)
1 can water packed tuna, drained
1/2 cup artichoke hearts, packed in water
1/4 cup roasted red peppers
1/2 cup sliced cherry tomatoes
 
Serves 1
 
Shake dressing ingredients well and pour 2 tablespoons over salad.
 
Dressing:
2 tablespoons olive oil
1 tablespoon lemon juice
1 tablespoon water
1 teaspoon fresh oregano
freshly ground black
pepper, to taste
