Hummus Portobello Wrap
With Roasted Red Peppers
Ingredients:
2 tablespoons extra virgin olive oil
1/2 yellow onion, thinly sliced
1 clove garlic
2 Portobello caps, sliced
1 cup roasted red pepper strips, drained
dash of Low Sodium Tamari Soy Sauce
2 teaspoons hummus
1 large pita, flat bread, or tortilla
1 handful baby spinach
1/2 handful cilantro
1/3 cup diced tomato
1/3 cup diced cucumber
sliced olives
Serves 2-3
Heat a skillet over medium high heat, add olive oil and onions. Sauté until transluscent.
Add garlic and Portobello slices. Sauté an additional 3-5 minutes then add roasted red
peppers and soy sauce. Cook 2-3 minutes more until well done.
Place flat bread on a plate and spread with hummus. Place grilled vegetables in the center
and top with remaining ingredients. Fold over and serve with a side of hummus and
warmed pita wedges.
