Pan Sautéed Salmon
with Lemon Dill and Asparagus
Salmon
4 salmon fillets
salt & pepper, to taste
olive oil
Yield: 4 servings
Salt and pepper fillets to taste. Heat pan first, then add
olive oil. Add salmon and shake. Let cook for 1 - 2
minutes. Turn, add an ice cube and cover. Let steam for
3 - 4 minutes.
Asparagus
2 bunches asparagus
2 tablespoons butter
1 tablespoon fresh lemon juice
garnish: fresh dill & lemon wedges
Yield: 4 servings
Blanche asparagus in about 1 inch of water for about 3 - 5 minutes. Drain, return pan to
medium heat and add 2 tablespoons butter and 1 tablespoon fresh lemon juice.
Stir well to coat.
