Pumpkin Pie
with Maple Whipped Cream
11/2 packages Mori-Nu Silken Tofu Extra-Firm
1 (15 oz) can cooked pumpkin
2/3 cup maple syrup
1 teaspoon vanilla
11/2 teaspoons ground cinnamon
3/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 unbaked graham cracker crust
Pre-heat oven to 400°.
Blend Tofu in a food processor or blender until creamy.
Add pumpkin, maple syrup, vanilla and spices; process well.
Pour into 9” unbaked graham cracker crust.
Bake about 1 hour or until a toothpick inserted in the center comes out clean.
Cool and serve with Maple Whipped Cream.
Maple Whipped Cream:
1 cup heavy whipping cream
1 teaspoon vanilla
1/4 cup maple syrup
Simply whip until you have fluffy peaks.
