Quinoa Pilaf
with Curry And Ginger
1 cup quinoa
2 cups water or vegetable broth
2 teaspoons curry powder
1 teaspoon ground ginger
sea salt to taste
1/2 cup unsalted cashews, chopped
1/2 cup raisins
Serves 4
Place quinoa in a fine mesh strainer, place under running water and rinse until the water
runs clear. Drain well and place in 11/2 quart saucepan. Add 2 cups water or broth and
bring to a boil. Cover and simmer on low for 15-20 minutes until the liquid is absorbed
and the quinoa is fluffy.
Stir in the curry powder and ginger.
Add cashews and raisins. Mix well and serve.
