Raspberry Tart
with Walnut Pecan Crust
Crust
1/2 cup pecans
1 cup flour
2 tablespoons raw sugar or maple granules
1/2 teaspoon sea salt
1/4 cup walnut oil
21/2 tablespoons ice water
Filling
1 (8 oz) package cream cheese, softened
2 tablespoons maple syrup
1 teaspoon vanilla
Glaze
1/2 cup pure fruit raspberry preserves (no added sugar or other fruit juice)
2 tablespoons freshly squeezed lemon juice
Fruit
3-4 cups fresh raspberries, washed and drained well
Preheat oven to 400°.
Place pecans in a food processor and pulse until finely ground, add flour, raw sugar or maple granules
and sea salt. Pulse and process until blended well. Transfer to mixing bowl.
In a small bowl or measuring cup whisk together oil and ice water until well combined. Pour into flour
mixture and mix with fork until well blended. Shape into ball with hands.
Place dough between 2 sheets of parchment paper and roll into an 11 inch circle. Remove top layer
of parchment paper and turn over into tart pan with removable bottom. Press dough evenly to edges
and up the sides of the pan, trimming off any excess. Prick bottom in several places with a fork. Line
with parchment paper and fill with dried beans or pie weights. Place on baking sheet and bake for 15
minutes. Remove parchment paper and beans or pie weights and bake for an additional 10 minutes
until edges are browned. Remove from oven and cool completely before filling.
In a separate bowl, whip together cream cheese, maple syrup and vanilla. Gently spread onto bottom of
cooled crust. Refrigerate for 10 minutes to set.
To make the glaze pour jam into small saucepan and warm over low heat just enough to thin and make
easy to spread. Whisk in 2 tablespoons fresh squeezed lemon juice. Keep warm until ready to use.
Place fresh raspberries in a single layer on top of filling, spreading evenly. Brush glaze over all filling in
areas between fruit. Refrigerate for 30 minutes to set. To serve lift bottom of tart out of ring, place on
serving plate leaving bottom of pan intact. Serve cool or at room temperature.
