Scones
Cranberry Orange Maple
3 cups pastry flour - organic whole wheat
1 tablespoon baking powder - aluminum free
1/2 teaspoon baking soda
pinch sea salt
3/4 cup butter - organic unsalted
1 cup dried cranberries
2 teaspoons grated orange peel
1/2 cup milk
1/2 cup pure maple syrup
11/2 teaspoons vanilla extract

Preheat oven to 375°.
Whisk or sift together: flour, baking powder, baking soda and sea salt. Slice butter into
pieces and add to dry ingredients. Cut in butter with a pastry blender or fork until the
mixture resembles pea sized crumbs. Blend in cranberries and orange peel. In a seperate
bowl, combine milk, maple syrup and vanilla extract. Make a well in the middle of the flour
mixture and pour in the wet ingredients. Gently mix together. The dough will be a little
sticky. (If it’s too wet add a little flour, and if it’s too dry add a couple tablespoons milk.)
Turn dough out onto a floured work surface and gently knead a few times. Don’t over knead
or scones will be tough. When dough is workable, divide in half. Pat down into about a 1
inch thick circle. Cut into triangles or use a biscuit cutter to cut out.
Line cookie sheet or baking stone with parchment paper and place dough about 1 inch apart.
Sprinkle with maple crystals. Bake for about 18 minutes.
