Sweet Potatoes

Ingredients:
6 large deep orange yams or sweet potatoes
1/3 cup fresh squeezed orange juice
1/4 cup maple syrup
1/3 cup walnut oil
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1 teaspoon sea salt
1/2 cup chopped pecans
1 tablespoon orange zest
 
Serves 6-8
 
Place washed sweet potatoes on a foil lined baking sheet and prick with a fork 2 to 3 times
each. Bake in a 400° oven for 1 to 11/2 hours until done (soft when lightly squeezed) being
careful not to overcook. Cool completely. Peel and slice in 1/4 inch slices. Lightly brush
walnut oil over the bottom of a 9 x 13 casserole. Layer sweet potatoes evenly. Drizzle 1/3
cup fresh squeezed orange juice over the potatoes. In a small mixing bowl whisk together
the maple syrup, walnut oil, vanilla and spices. Pour over the sweet potatoes. Sprinkle the
chopped pecans over the top and lightly sprinkle with orange zest. Bake covered at 350° for
20-30 minutes.
